Oysters and Pearls
Signature DishesThomas Keller's most iconic dish, served at both The French Laundry and Per Se. Island Creek oysters are poached in butter, creating a silky texture. Tapioca pearls add textural contrast and a subtle umami sweetness. The sauce is a rich sabayon with caviar adding briny intensity. This is the signature course that defines the Per Se experience and appears in every tasting menu.
Hudson Valley Foie Gras with Oat Tuile and Cherry Compote
MainsA typical second course that showcases the kitchen's classical French technique. The foie gras is poached to ensure it remains silky throughout, with the slight acidity of the cherry compote cutting through the richness. The oat tuile provides textural crunch. This dish exemplifies Keller's approach of balancing technical perfection with flavor clarity.
Stonington Sea Scallop with Ricotta Dumplings and Black Truffle
MainsA seafood course that demonstrates precision cooking. The scallop is seared until the exterior is golden while the interior remains barely set. The ricotta dumplings provide creamy contrast while the truffle beurre blanc adds earthy depth and luxury. This course typically appears in the seafood-forward menu option.
Crispy Pork Belly with English Peas and Black Truffle Sauce
MainsA savory main course that balances richness with brightness. The pork belly is seared until the skin is crispy and the fat renders, while the meat remains tender. English peas add freshness and sweetness. The black truffle sauce ties the elements together with umami depth. Multiple reviewers in 2025 call this out as perfectly executed.
Chef's Tasting Menu
MainsThe tasting menu at $425 per person is the definitive way to experience Per Se. Each course is carefully sequenced to build toward the Oysters and Pearls course, typically served in the middle of the meal. The menu changes daily based on market availability. The experience concludes with an elaborate dessert progression. This is Keller's statement menu and the reason the restaurant has maintained three stars.

Every seat overlooks Columbus Circle, but the views of Central Park sunset are most dramatic from window tables. Parties of 2+ are more likely to get window seating — request this when booking on Tock.
This has been three Michelin stars since 2006. It's the only Keller restaurant in New York to maintain this status. Both the technique and consistency are remarkable.
