Our most popular whole fish preparation. Sourced daily, the sole is grilled whole and then expertly filleted at the table by your waiter. It is served with a light, warm emulsion of Mediterranean lemons and high-quality local butter.

We use only XL-sized mussels from the northern Galician rías. They are steamed open with a touch of local white wine, sea salt, and a bouquet of Mediterranean herbs (mostly bay leaf and parsley) to preserve their clean, saline flavor.
