Daal
SidesA showstopping side that could stand alone as a main. The daal simmers for eight hours, building incredible depth and richness. It's butter-heavy, luxurious, and the kind of comforting dish that tastes like home. One of the dishes that Khanna is most known for.
Yogurt Kebab
Small PlatesChef Khanna's quickly iconic dish. Spiced hung yogurt is wrapped in crispy kataifi pastry and served with a bright pickled purple cabbage puree and spicy mango coulis. It's savory, crispy, and perfectly balanced with acid and heat. A must-order that captures Khanna's approach to modernizing Indian cuisine.
Ammi's Lamb Chops
MainsTender lamb chops are coated with what seems like an inch-thick layer of garlic and mango powder, drawing on a recipe from Vikas' mother. The dish is fragrant, intensely flavored, and showcases the restaurant's commitment to family recipes. A standout main.
Rajasthani Pulled Lamb
MainsLamb is slow-cooked for eight hours in a thick sauce building layers of flavor through spices, aromatics, and time. The meat is tender enough to fall apart on the fork. This dish exemplifies the kitchen's commitment to traditional slow-cooking techniques adapted for modern plating.
Anarkali Chicken
MainsChicken is finished with a pomegranate glaze that adds sweetness and depth, with the skin crisped to perfection. The name references a historical figure, and the dish itself is both elegant and approachable. A great option for those who want something slightly lighter than the heavier curries.
