Juana's famous tortilla takes 2.5 hours on low heat in a blend of carefully selected oils — the result is a creamy, drippy center with a distinctive aroma and taste. The egg is never overcooked, but not so moist it feels raw. Multiple reviews call this one of the best tortillas in all of Spain, with the inside so yielding it barely holds its shape on the plate.
Tips from diners
This is the only thing you need to order — do not skip it. The tortilla de patatas is what made the original location famous.
The center should be creamy and slightly runny — if it's fully set, it's been overcooked. Good tortillas at Juana have a soft, yielding center.
The simplest tapas done well — crusty bread rubbed with ripe tomato and finished with quality olive oil. It's refreshing and light, especially after richer dishes.

Cheap and good — a classic way to start a meal or finish a round of drinking.
A light, classic tapas built on crusty bread topped with thin sliced jamón and rubbed fresh tomato — simple preparation that lets the quality of the ham shine.
Tips from diners
A good pairing with the tortilla — complementary flavors and portion sizes.
Golden croquettes with a rich mushroom and cream filling — a vegetarian option that's as carefully made as any of their meat dishes.
Tips from diners
One or two croquetas makes a good light snack alongside the tortilla.
Hot oil with tender shrimp and sliced garlic — a simple preparation that's Spanish bar tradition. The chili heat is gentle and the garlic is sweet from the oil.
Tips from diners
Order this hot and eat it immediately, standing at the bar if you can — the oil and heat are part of the experience.
Originally founded in 2001 at Plaza de Puerta de Moros, Juana La Loca became famous for one dish: tortilla de patatas loaded with caramelized onions and cooked to a precise creamy texture that earned devoted followers. The restaurant closed in March 2024 but relaunched under new ownership at Calle de Recoletos 10, bringing the same tortilla recipe to the heart of Madrid's Art Walk with a revamped menu.
The new location on Recoletos fills up fast, especially on weekends. Book ahead to avoid a long wait, especially Friday and Saturday.
The restaurant operates split hours — lunch 1-5 PM and dinner 7 PM-1 AM on weekends. Monday evenings are dinner only. Check the website for current hours.
The bright, open venue near Paseo de Recoletos is newer and roomier than the original La Latina location — but still always busy. Come with patience or with a reservation.
