Coffee Collective is famous for light roasts that showcase origin characteristics rather than roast profile. They change their single-origin offerings seasonally, working directly with farmers in Guatemala and Brazil. Each brew is made fresh, taking 3–5 minutes. The coffee is acidic, tea-like in body, and floral or fruity depending on the origin.
Tips from diners
Ask the barista which single-origin is current—they can explain the tasting notes and brewing method. This is an education in light roast coffee.
Coffee Collective's espresso is made from their house blend—a light roast that's balanced but still offers acidity and clarity. When pulled well, it tastes sweet and floral rather than bitter or ashy. Available as a single or double shot.
Tips from diners
Order an espresso if you're in a hurry, or a filter coffee if you want to experience what light roast specialty coffee tastes like.
Made with their light-roasted espresso and Danish whole milk, this cappuccino is less heavy than traditional versions because the espresso doesn't overpower the milk. The microfoam is tight and smooth.
Tips from diners
If you prefer milk with your coffee, the cappuccino showcases the quality of both the espresso and the milk.
A flatter, more milk-forward drink than cappuccino—the steamed milk is silky and glossy, covering the espresso without a thick foam. This is where the quality of the light-roasted espresso comes through: the milk doesn't drown it.
Tips from diners
The flat white is a perfect afternoon coffee—less intense than an espresso, more refined than a cappuccino.
Coffee Collective sells their light-roasted beans for home brewing. Beans come from the same farms they've worked with since 2007, and are roasted in-house. Packaged fresh, with tasting notes and brewing recommendations included.
Tips from diners
Ask the staff which bean they recommend for your brewing method—they can help you pick the right roast date and origin.
Coffee Collective was founded in 2007 by three coffee professionals (Klaus Thomsen, Peter Dupont, and Casper Rasmussen) with a vision of creating direct and transparent relationships between coffee farmers and consumers. Their first café opened in 2008. The roastery pioneered the Nordic style of coffee—light roasts that highlight the inherent qualities of each origin, avoiding the dark, smoky roasts that dominated at the time. Today, Coffee Collective is a certified B Corp with eight café locations in Copenhagen. They still work with the same Guatemalan and Brazilian farms they partnered with in 2007, paying significantly above Fair Trade prices.
The Jægersborggade location in Nørrebro is the flagship. Coffee Collective also has seven other café locations across Copenhagen if this one is busy.
Come for the coffee—it's an education in what light roast specialty coffee can taste like. The baristas are knowledgeable and happy to explain their sourcing and brewing methods.
Coffee Collective is a certified B Corp with a strong commitment to Direct Trade farming practices. Prices are higher than chains, but that reflects fair wages to farmers.
If filter coffee takes too long, order an espresso or cappuccino. Both are made well and show off the quality of light-roasted beans.
