About Restaurant MAZ
Chef Virgilio Martínez, the visionary behind Central in Lima (one of South America's most celebrated restaurants), opened MAZ in Tokyo in 2023 on the 3rd floor of Tokyo Garden Terrace Kioicho. The restaurant earned its first Michelin star in 2024 and maintained it in 2025. The nine-course tasting menu is built around Peruvian altitude — each course corresponds to the altitude at which the star ingredient was sourced. Only 20% of ingredients are imported from Peru; the other 80% come from Tokyo specialist growers and producers, creating a fascinating fusion of terroir.
