Best Dishes at Japanese Soba Noodles Tsuta
Shoyu Soba
RamenTsuta's trademark dish features a carefully balanced chicken and seafood stock enhanced by a delicate soy sauce blend. Thin, stone-milled noodles cradle a slice of pork char siu. The black truffle oil is applied as a finishing touch, adding luxury and aroma without overpowering the broth. The broth achieves refinement through precision—no overly heavy flavors, just layered umami.
Dried Sardine & Bone-Broth Ramen
RamenA third option showcasing Japanese broth traditions. Built from dried sardine and bone broth, it offers a more assertive umami profile compared to the truffle-based versions. Still maintains Tsuta's precision—no fishiness, just clean umami depth.
Shio Ramen with White Truffle Oil
RamenThe alternative to the shoyu version, using salt seasoning instead of soy sauce. The white truffle oil (as opposed to black) provides different aromatic notes. The broth base remains the same careful balance of chicken and seafood. Noodles are equally thin and delicate.
About Japanese Soba Noodles Tsuta
In 2015, Tsuta made history by becoming the first ramen restaurant in Tokyo to earn a MICHELIN star. The original Sugamo location closed in November 2019 and relocated to Yoyoji-Uehara in December 2019. The restaurant is famous for its soy-based ramen featuring a delicate chicken and seafood broth enhanced by black truffle oil, crafted with soba-level precision. Chef and owner Yuki Onishi passed away in September 2022, but the restaurant was revived and continues to operate at its Yoyoji-Uehara location.
