Tsuta's trademark dish features a carefully balanced chicken and seafood stock enhanced by a delicate soy sauce blend. Thin, stone-milled noodles cradle a slice of pork char siu. The black truffle oil is applied as a finishing touch, adding luxury and aroma without overpowering the broth. The broth achieves refinement through precision—no overly heavy flavors, just layered umami.
Tips from diners
The black truffle oil is the signature element. Smell it before tasting to appreciate the aromatics.

Tips from diners
If trying twice, order both soy and salt versions to see how truffle changes with different seasonings.
A third option showcasing Japanese broth traditions. Built from dried sardine and bone broth, it offers a more assertive umami profile compared to the truffle-based versions. Still maintains Tsuta's precision—no fishiness, just clean umami depth.
